The tea rooms have been closed for approximately six years but will re-open to the public on June 7 following a major upgrade.
New owner Roger Haylock has invested a significant amount of money into the business and has big plans for the future.
The tea rooms have been set up to cater for weddings, complete with water feature and marquee seating for 200 people.
In years to come Mr Haylock is hoping to build cabins on the site to provide accommodation for wedding guests and other visitors.
He is also hoping to attract some of the travellers in campervans that currently use Milton Showground.
Mr Haylock has owned a house in Mollymook for the past two years and told the Times last week that he had been looking for land to start a small hobby farm.
He decided to purchase the tea rooms because of their potential, describing it as his "challenge for the next couple of years" after stepping back from his Canberra-based glass business.
He has been upgrading the site since February, with the improvements including a new toilet block, outdoor seating and a flattened area for the marquee.
The tea rooms themselves have also been extensively refurbished in preparation for next month's re-opening - just in time for the Queen's Birthday long weekend.
The tea rooms will open Thursday to Sunday from 9am to 3pm offering "good old-fashioned food" including hearty breakfasts and lunches.
Wood-fired pizzas will be a new addition to the menu and over time Mr Haylock is also hoping to bake his own bread on-site.
Mr Haylock is organising an invitation only pre-opening on June 3 to put everything to the test but says everything at this stage is very much on track thanks largely to the help of local workers including 'Mouse' and 'Woodsey'.
He told the Times last week that he had initially been planning to open in September so next month's opening was well ahead of schedule.
He said the feedback from local residents had been extremely positive and he is confident the venture will be a success.
Mr Haylock provided tea house vouchers as prizes for the recent Marine Rescue golf day in Mollymook.
