Mr Jennings, who has been a keen musician for more than 60 years, flagged his intentions earlier in the year to stage the fundraising concert, but says COVID has "restricted his plans".
"This [COVID lockdown] has gone longer than anyone anticipated," he said.
"COVID has certainly slowed everything down.
"But I'm still keen to hold the concert and I've had great response from a number of local performers and musicians."

It is a cause that is close to Mr Jennings' heart, his wife of 33-years, Jennifer, is suffering from what he describes as a "horrible disease".
Local singing sisters Joy, Robin and Kathy Sharpe will be performing as will a local saxophonist, a couple of guitarists and a five-piece brass band.
Mr Jennings will also, of course, be taking to the stage, performing music from the '50s, '60s and '70s or as he puts it "the only music there is - something you can understand".
But, of course, there is still room for more performers.
The event is planned for the Nowra School of Arts and Mr Jennings envisages the concert will run for around four hours.
"Shoalhaven City Council has given us the okay to stage the concert at the School of Arts which is great," he said.
"I'm really looking forward to it and hope to be able to set a date soon and it will be great to be able to do something for the Breast Cancer Foundation.
"But the way things are going I think it will be after Christmas."
